While writing my Prohibition-era romance novel, Mistaken, I did plenty of research on 1920s soda fountains. And tasty research it was, too! After some trial & error, I’ve collected some basic recipes so we can make them at home.
Today we’re looking at one of my favorites, the strawberry ice cream soda. The drink is similar to a root beer float, but using strawberry soda. In fact, if you look back at my last post about the Brown Cow, you might realize that a strawberry ice cream soda is also known as a “Pink Cow.”
Start with 1 to 1/12 ounces of strawberry syrup. Add 8 ounces of seltzer or club soda and stir. Top it with a scoop of ice cream (either vanilla or strawberry–I prefer the vanilla) and you’re ready to sip!
To make it even more festive, you can add whipped cream, cherry, and sprinkles.

Searching for strawberry syrup? I use Torani syrups, like they use at coffee shops, but I’ve noticed that Hershey makes one also. I haven’t tried it in a drink yet, but it might be worth a try! The one shown above is made by Entner-Stuart. After sampling its 100% natural flavor, I think I’ve decided I must be one of the oddballs who prefers artificial flavoring. But it’s another option, if you’d rather go natural. You could also use basic grocery store strawberry soda to make it even easier.
